Transformed food (1)(Bean paste, fermented bean curd, miso)
Among the foods we talked about before, there are several kinds of foods called transformed foods, and there are several kinds of transformed foods, some of which are quite good ingredients, like nattoase, which is a kind of transformed food. Now everyone is studying what to use after things are transformed, what are the benefits to the human body? During this transformation, it has two major series. One series is to change this allergy or how to change it, and change a different food. Like fermented bean paste, it is made from soybeans, but it tastes different from soybeans. Then there are more and more transformed things. Everyone is looking for something to transform it into our best food. This happened before 1948 (Republic of China) and was discovered by foreign countries. It is believed that during the fermentation process using this procedure, the norinic acid-resistant fatty acid in the beans is transformed into an immune body that can provide a lot.
The very famous Yunnan Pu'er tea, in fact, it must be fermented. The fermentation process of Pu'er tea that I know is the same as the fermentation process of composting. Then fermented with pig feces water, if it is fast, mixed with pig fat and pig urine to ferment the fastest, it sounds ugly, but for the sake of economic value, the really good Pu'er is fermented with a compost type, and when it is changed, the taste is smelly and musty, but it has a fragrant smell. I used to like Pu'er very much because it was not promoted in the mainland in the early days and it was very cheap. Some people brought a little bit to Hong Kong and called tea cakes. That was 50 or 60 years ago. Now I don't like drinking Pu'er.
Fairyland tea is a kind of ripe tea. If it is fully fermented, it will be roasted until it is called semi-carbonization. If it is cold brewed, it will hurt the stomach. The tannins will come out and the stomach will turn brown. This kind of change, now probably a lot of health foods are going this way. Let’s look at another fifty years ago. Grapefruit pulled out, added in the traditional Chinese medicine, tied the red rope, and sold it piece by piece. That was our food. We stuffed the Chinese medicine into it to ferment and transform it, saying how good it to quench thirst.
Now that whoever probably over forty-five years old, regardless of men and women, the blood fats are all high, so why? Because of eating too much carbohydrates, they are all gramineous foods. You can eat rice without noodles, tomato fried rice, or fried noodles. As long as you eat gramineous things, when you are in your forties, your neutral fat is called triglyceride. Or called blood fat, it will be high. So in terms of food, what kind of carbohydrates should you eat if you don’t eat carbohydrates from rice?
